Lamb Cutting Instruction Comparisons
New cut sheet options have been added to best meet your needs. We have streamlined submissions for simple orders, but still offer all of the same great options that we used to. Read the comparisons below for more information to help you choose the Cutting Instruction that fits you best. 1 – Butcher Basic
Butcher Recommended Cuts: Shoulder roast, Bone-in leg, Rib & Loin chops, ground lamb

2 – All Grind
Everything is ground: Up to 2 sausage options

Terms/Conditions
Basic Fees
- Basic Slaughter Fees: $0.97/lb on hanging carcass weight ($46.59 minimum per animal).
- Processing (includes standard vacuum packing!) – $1.45/lb hanging carcass weight ($48.40 minimum per animal).
- Wool breeds that are not shorn before slaughter may be subject to a $60.50 fee per animal due to increased handling costs.
- Federal Inspection $19.97 (this fee helps maintain the facility to USDA standards).
- Offals are $7.99 per animal. If you would like offals packaged, we must know when the animal is dropped off. These are saved at time of slaughter, so please be sure your farmer lets us know if you would like any or all of these items.
- Freezer rental of $2.60/day (orders less than 14 boxes ONLY) is charged 7 days after notification of your fresh portion order. Orders that have 14 boxes or more are stored in our warehouse freezer on a pallet. Please note that you will be notified when your fresh lamb/goat is completed and again when your trim value added options (patties, special requests, etc). During our higher volume months, there may be some wait time. We do ask you pick up for each notification.
- Submissions after slaughter appointment and/or changes to the order after submission are subject to a $12.10 change order fee. Additional fees may apply in the event of unforeseen circumstances. We strive to work efficiently to keep the cost of your order as low as possible.
Disclaimers
- A 10% variance may occur from patties ordered versus patties made.
- Our sausages are as natural as possible. They leave out MSG and all preservatives possible. Natural sugars are used. A 10% variance may occur from pounds ordered versus pounds made.
- FOR WHOLESALE ONLY: Breakfast links/patties which have a 50lb minimum. FOR WHOLESALE ONLY: Trim options have a 25lb minimum, except breakfast links/patties which have a 50lb minimum and bacon patties which have a 100lb minimum. (There may be a 10% variance between requested and received trim products).
- FOR WHOLESALE ONLY: A whole lamb generally yields enough for ONLY one option. Grinding the legs and/or shoulders, may be required for additional options. Our suggestion is to do 25lbs of a sausage per 2 whole lambs. Please note that our process is designed to season 25lb increments of sausage. All options may not be filled since lambs yield minimal grind.
